Ingredients

  • 1 kg 2.2 lb Potatoes

  • 3 3 Eggs

  • 150 g 2/3 cup Milk

  • 300 g 2 cup All-purpose Flour

  • 1 tsp 1 tsp Baking Powder

  • 30 g 2 tbsp Olive Oil

  • Salt and Pepper, to taste

  • 1 tbsp 1 tbsp Smoked Paprika

  • 50 g 3 tbsp Butter

  • 150 g 5 oz Melting Cheese, cut into cubes

  • 200 g 2 cup Breadcrumbs

  • Sunflower or Olive oil for frying

How to make Potato Croquettes with Cheese

  • Peel the potatoes, cut them into pieces, and place them in a pot.
  • Add salt and fill the pot with water until the potatoes are fully covered.
  • Boil for about 25 minutes until tender.
  • In a large bowl, add the milk, eggs, salt, pepper, and smoked paprika and mix well.
  • In another bowl, mix the flour with the baking powder. Add 4 tablespoons of this mixture to the bowl with the wet ingredients, add the olive oil, and mix until a smooth batter forms. Set aside.
  • Transfer the boiled potatoes to a bowl and mash them well.
  • Add the butter, salt, and pepper and mix.
  • Gradually add the remaining flour while mixing. Knead lightly until the ingredients are combined.
  • Cut the cheese into small cubes.
  • Divide the dough into pieces of about 80โ€“100 g (3โ€“3.5 oz) each.
  • Flatten each piece of dough with your hands and place a cube of cheese in the center.
  • Close the dough and shape it into croquettes.
  • Dip each croquette into the batter and then coat it with breadcrumbs.
  • Heat oil in a frying pan and fry the croquettes until they develop a beautiful golden color.
  • Alternatively, bake them in the oven: place the croquettes on a baking tray lined with parchment paper, brush them with sunflower oil, and bake in a preheated oven at 200ยฐC / 400ยฐF until golden.
