Ingredients

  • 1 kg 1 Whole Wheat Flour

  • 125 g 125 All-Purpose Flour

  • 1 tsp 1 Sugar

  • 1 1/2 tbsp 1 1/2 Salt

  • 7 tbsp 7 Olive Oil

  • 21 g 21 Dry Yeast

  • 750 g 750 Lukewarm Water

  • (Optional) Sunflower Seeds and Oats for topping

How to make whole wheat dutch oven bread

  • Preparing the Dough
  • In a bowl, add the all-purpose flour, yeast, and sugar. Mix and set aside.
  • In another bowl, add the whole wheat flour, salt, olive oil, water, and the yeast mixture.
  • Mix for about 4 minutes until you get a firm dough.
  • First Rise
  • Cover with a towel and let it rise in a warm place for 1 hour, until doubled in size.
  • Preheating
  • Preheat the oven to 220ยฐC / 430ยฐF (conventional heat).
  • Place the Dutch oven inside to heat thoroughly.
  • Shaping
  • Transfer the dough to your work surface and knead lightly to deflate.
  • Shape into a loaf.
  • Place on parchment paper and cover while waiting for the oven.
  • Baking
  • Carefully place the dough (with parchment) into the hot Dutch oven.
  • Lightly spray with water and optionally sprinkle with seeds and oats.
  • Score the top with a razor.
