  • 500 g 1.1 lb Apricots

  • 60 ml 1/4 cup Water

  • 230 g 1 cup Sugar

  • Juice of 1/2 Lemon

  • 1 1 Vanilla Capsule

How to make Apricot Jam

  • Remove the pits from the apricots.
  • Cut the apricots into quarters.
  • Place them in a saucepan.
  • Add the sugar and water.
  • Place the saucepan over high heat.
  • Bring the mixture to a boil.
  • Reduce the heat to medium-low and simmer for 10 minutes.
  • Remove the saucepan from the heat.
  • Blend the mixture using an immersion blender until smooth.
  • Return the saucepan to medium heat.
  • Add the vanilla and lemon juice.
  • Simmer for an additional 5 minutes, until the jam thickens.
  • Transfer the hot jam to a sterilized jar.
  • Allow it to cool.
  • Store in the refrigerator.
