Ingredients

  • 50 g 3.5 tbsp Olive Oil

  • 700 g 1.5 lb Country-style Sausage, sliced into rounds

  • 2 2 Long Sweet Green Peppers, cut into large pieces

  • 2 2 Sweet Red Peppers, cut into large pieces

  • 20 20 Cherry Tomatoes

  • 1 tbsp 1 tbsp Smoked Paprika

  • Salt, to taste

  • Black Pepper, to taste

  • 1 1/2 tbsp 1 1/2 tbsp Tomato Paste

  • 120 ml 1/2 cup Water

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • 250 g 9 oz Melting Cheese, grated

  • Thyme, to taste

How to make Spetsofai

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced sausage and cook until lightly browned.
  • Transfer the sausage to a plate and set aside.
  • Add the peppers to the same skillet.
  • Sauté until they begin to soften.
  • Add the cherry tomatoes.
  • Stir and cook for approximately 5 minutes.
  • Return the sausage to the skillet.
  • Add the parsley and stir.
  • Add the tomato paste and sauté for 1–2 minutes.
  • Pour in the water.
  • Stir, cover with a lid, and reduce the heat to medium.
  • Bring the mixture to a gentle simmer.
  • Season with salt, black pepper, smoked paprika, and thyme.
  • Stir well.
  • Cover again and cook for approximately 5 minutes, until the sauce thickens slightly.
  • Remove from the heat and transfer the Spetsofai to a clay baking dish or oven-safe dish.
  • Finish with Cheese
  • To take this Greek Meze to the next level, sprinkle the grated cheese evenly over the top.
  • Cook in an air fryer for 8 minutes or bake in a preheated oven at 400°F (200°C) for approximately 10 minutes, until the cheese melts and becomes golden.
  • Serve hot.
