Ingredients
- For the Dough
900 g 7 1/4 cup All-purpose Flour
500 g 2 cup Water
1 tbsp 1 tbsp Vinegar
2 tsp 2 tsp Baking Powder
220 g 1 cup Mixed Olive Oil and Sunflower Oil
Salt and Black Pepper
220 g 2 cup Grated Graviera (or another hard cheese)
- For Brushing
1 1 Egg
30 g 2 tbsp Milk
Sesame Seeds
Recipe directions
- Prepare the Dough
- In a large bowl, combine the water, vinegar, olive oil and sunflower oil mixture, grated cheese, baking powder, salt, and black pepper.
- Mix well.
- Gradually add the flour while mixing continuously.
- Knead briefly until a dough forms that no longer sticks to your hands.
- Let the dough rest for 15 minutes.
- Prepare the Egg Wash
- In a small bowl, whisk together the egg and milk.
- Shape the Breadsticks
- Transfer a portion of the dough onto a lightly floured work surface.
- Flatten it slightly with your hands.
- Roll it out using a rolling pin to a thickness of approximately ½ cm (¼ inch).
- Trim the edges to form a rectangle.
- Cut the dough into breadstick shapes.
- Arrange them on a baking tray lined with parchment paper.
- Brush the tops with the egg wash.
- Sprinkle generously with sesame seeds.
- Bake
- Bake in a preheated oven at 350°F (180°C) using conventional top and bottom heat for 20–25 minutes, or until beautifully golden.
- Allow them to cool before serving for maximum crispness.
