These Traditional Cretan Lychnarakia, also known as Kalitsounia, are among the most recognizable pastries of Crete. Each pastry is shaped by hand with its characteristic pinched edges and filled with sweet, creamy mizithra cheese flavored with vanilla, fresh mint, or orange zest.

Ingredients
- For the Dough
300 g 1 1/2 Granulated Sugar
240 ml 1 Milk
45 g 3 Dairy Butter, melted
15 g 1 tbsp Baking Powder
2 2 Egg Yolks
1 kg 8 cup All-purpose Flour (approx.)
- For the Filling
1 kg 2.2 lb Mizithra Cheese
200 g 1 Granulated Sugar
2 2 Eggs
2 2 Vanilla Capsules
- For the Topping
1-2 1-2 Eggs, beaten
Ground Cinnamon or Sesame Seeds
Recipe directions
- Prepare the Filling
- Place the mizithra cheese in a large bowl.
- Mash it thoroughly with a fork until creamy.
- Add the eggs, sugar, and vanilla.
- Alternatively, flavor the filling with fresh mint or orange zest.
- Mix until smooth and evenly combined.
- Prepare the Dough
- In a large mixing bowl, combine the sugar, milk, melted butter, and egg yolks.
- Gradually add the flour together with the baking powder.
- Knead until a soft, pliable dough forms.
- Cover the dough and refrigerate for 30 minutes.
- Shape the Lychnarakia
- Roll the dough out to approximately 3 mm (⅛ inch) thick.
- Cut it into circles using a small saucer or round cookie cutter.
- Place one tablespoon of filling in the center of each circle.
- Lift the dough around the filling and make approximately 10–12 small pinches around the edge to create the traditional lychnaraki shape.
- Arrange the pastries on a baking tray lined with parchment paper.
- Finish and Bake
- Brush the pastries with beaten egg.
- Sprinkle with ground cinnamon or white sesame seeds.
- Bake in a preheated oven at 350°F (180°C) using conventional top and bottom heat for approximately 25–30 minutes, until beautifully golden.
- For a more traditional aroma, place the warm pastries on fresh lemon leaves for a few minutes after removing them from the oven.
- Allow them to cool slightly before serving.
