Ingredients

  • For the Dough
  • 500 g 500 Self-rising Flour

  • 8 g 8 Dry Yeast

  • 1 1 Egg

  • 150 g 150 Vegetable Oil

  • 250 g 250 Lukewarm Milk

  • 1 pinch 1 Sugar

  • 1 tsp 1 Salt

  • For the Filling (about 500 g)
  • Grated Gouda Cheese

  • Anthotyro or mild ricotta-style cheese

  • Feta cheese

  • For Brushing
  • 1 1 Beaten Egg

  • Sesame Seeds (optional)

Recipe directions

  • Prepare the Dough
  • In a large bowl, add the self-rising flour, dry yeast, egg, lukewarm milk, sugar, and salt.
  • Begin kneading until the ingredients start coming together.
  • Gradually add the vegetable oil toward the end.
  • Continue kneading until you have a soft and smooth dough.
  • Let the Dough Rise
  • Divide the dough into 5 equal pieces.
  • Shape each piece into a ball.
  • Cover and let them rest in a warm place until doubled in size.
  • Prepare the Filling
  • In a bowl, combine the Gouda, anthotyro, and feta cheese.
  • Mix until evenly combined.
  • Shape the Cheese Rolls
  • Roll each dough ball into a round sheet.
  • Cut each circle into 8 triangle-shaped pieces.
  • Add a small amount of cheese filling to the wider edge of each triangle.
  • Roll into small pastries.
  • Place them on a baking tray lined with parchment paper.
  • Bake
  • Brush the tops with beaten egg.
  • Sprinkle with sesame seeds if desired.
  • Bake in a preheated oven at 350°F (180°C) for approximately 25 minutes, until beautifully golden.
