Crispy Baked Zucchini Fries Better Than Fried

Ingredients
800 g 1 3/4 lb Zucchini
2 cups 2 Coarse Wheat Flour or Fine Semolina
Salt and Black Pepper, to taste
1 tbsp 1 tbsp Smoked Paprika
1 tbsp 1 tbsp Garlic Powder
150 g 5 oz Grated Parmesan cheese (or kefalotyri cheese)
50 g 1/4 cup Olive Oil
1 tsp 1 tsp Dried Thyme
Recipe directions
- Prepare the Zucchini
- Trim the ends from the zucchini.
- Lightly score the surface of each zucchini with a fork.
- Cut each zucchini in half lengthwise.
- Slice each half into fry-shaped sticks.
- Prepare the Coating
- In a large baking dish or shallow bowl, combine coarse wheat flour, grated parmesan, salt, black pepper, smoked paprika, garlic powder, thyme.
- Mix well.
- Coat the Zucchini
- Add the zucchini sticks to the flour mixture.
- Toss until every piece is well coated.
- Bake
- Arrange the zucchini in a single layer on a parchment-lined baking tray.
- Drizzle evenly with the olive oil.
- Sprinkle any remaining coating mixture over the zucchini.
- Bake in a preheated oven at 400°F (200°C) using conventional top and bottom heat for about 40 minutes, or until golden and crispy.
- Serve immediately while hot and crisp.
