These Greek Easter cookies (koulourakia) are soft, buttery, and ароматized with orange, mahleb, and mastic. They taste like tsoureki and are perfect for holidays or everyday treats.

Ingredients

  • For the Dough
  • 4 4 Eggs

  • 320 g 1 1/2 cup Sugar

  • 325 g 1 1/4 cup Milk

  • 180 g 3/4 cup Butter, room temperature

  • 3 3 Vanillin Capsules

  • 1 pinch 1 pinch Mastic (2 tears, ground)

  • 2 tsp 2 tsp Mahleb (10 g)

  • Zest of 1 Orange

  • 20 g 2 tsp Baking Powder

  • 1200 g 8 cup All-purpose Flour

  • For Brushing
  • 1 1 Egg

  • 30-40 g 2-3 Water

  • 1 pinch 1 pinch Salt

How to make Greek Easter Cookies

  • In a large bowl, add the eggs and sugar and beat with a hand mixer.
  • Add the orange zest, mahleb, mastic, and vanilla and mix.
  • Add the butter and mix until incorporated.
  • Gradually add the milk while mixing continuously.
  • In a separate bowl, mix the flour with baking powder and a pinch of salt. Add gradually while kneading with your hands until you have a dough that does not stick.
  • Transfer the dough to the refrigerator for 10 minutes to rest.
  • Take small portions of dough (about 30 g / 1 oz) and shape into desired cookie forms.
  • Place the cookies on a baking tray lined with parchment paper, leaving space between them.
  • For Brushing
  • In a bowl, whisk the egg with water and salt.
  • Brush the cookies with the mixture.
  • Baking
  • Bake in a preheated oven at 180°C / 350°F (conventional heat) for 20–25 minutes, until golden.
