Ingredients

  • Dough
  • 1 kg 8 1/3 cup All-purpose Flour

  • 700 g 2 3/4 cup Water

  • 14 g 4 1/2 tsp Dry Yeast

  • 15 g 1 tbsp Sugar

  • 20 g 1 tbsp Salt

  • 40 g 3 tbsp Olive Oil

  • Extra Flour for shaping

  • For Brushing
  • 1 cup 1 cup Hot Water

  • 1 tbsp 1 tbsp Sugar

  • Sesame Seeds for topping

How to make Greek Baguette

  • Prepare the Dough
  • In a bowl, add the water, sugar, and yeast and stir.
  • Add the flour, olive oil, and salt. Mix well until a soft dough forms.
  • Cover the dough with a towel and let it rise in a warm place for 30–40 minutes.
  • Prepare the Sugar Wash
  • While the dough rises, mix the hot water with the sugar in a bowl and let it cool.
  • Shaping
  • Transfer the dough to a floured surface and gently deflate it with minimal handling.
  • Divide the dough into 4 equal pieces.
  • Shape each piece into a loaf with your hands.
  • Let the loaves rest briefly.
  • Place each loaf on separate parchment paper and shape them into their final form.
  • Arrange on a baking tray with parchment separating the baguettes so they don’t touch.
  • Rest for 15 minutes.
  • Finishing & Baking
  • Brush the baguettes with the sugar-water mixture and sprinkle with sesame seeds.
  • Score diagonal cuts on the surface using a sharp knife or razor blade.
  • Bake in a preheated oven at 200°C / 390°F (static heat) for 35–40 minutes until golden.
