Ingredients

  • For the Dough
  • 2 2 Eggs

  • 300 g 1 1/4 cup Milk

  • 1 pinch 1 pinch Salt

  • 1 tsp 1 tsp Vanilla extract or 3 Vanillins

  • 16 g 0.5 oz Dry Yeast (2 sachets)

  • 650 g 5 cup Bread Flour

  • 150 g 3/4 cup Sugar

  • 130 g 9 tbsp Butter

  • For the Filling
  • 200 g 7 oz Milk Chocolate Chopped (or hazelnut spread / marmalade)

  • For Brushing
  • 1 1 Egg

How to make Homemade Croissants

  • In a stand mixer bowl, whisk eggs with milk.
  • Add butter, salt, vanilla, and sugar. Mix lightly.
  • Add flour and yeast. Knead for 5 minutes (or 7 minutes by hand) until smooth.
  • Form into a ball, cover, and let rise for 1 hour.
  • Punch down dough and transfer to a floured surface. Divide into 10 equal parts.
  • Roll each piece into a rope, flatten slightly, and use a rolling pin to widen.
  • Place chopped chocolate (or filling of choice) on the thicker side. Fold dough over the chocolate to seal, then roll into a croissant shape.
  • Place on a parchment-lined tray, leaving space between each. Let rest for 25 minutes.
  • Beat 1 egg and brush over croissants.
  • Bake in preheated oven at 160°C (320°F), bottom heat, for 25 minutes until golden.
