Ingredients

  • For the Phyllo Dough
  • 750 g 6 cup All-purpose Flour

  • 400 g 1 2/3 cup Water

  • 1 1/2 tsp 1 1/2 tsp Salt

  • 50 g 1/4 cup Olive Oil

  • 1 tbsp 1 tbsp Vinegar

  • Filling
  • 200 g 6/7 cup Heavy Cream

  • 200 g 7 oz Cream Cheese (or 150 g / 2/3 cup Milk)

  • 300 g 10.5 oz Anthotyro Cheese, crumbled

  • 130 g 4.5 oz Regato Cheese, grated

  • 400 g 14 oz Feta Cheese, crumbled

  • Thyme and Pepper

  • Olive oil for layering

  • Cornstarch for rolling the sheets

  • Sesame Seeds (optional)

How to make Greek Cheese Pie

  • Dough
  • In a bowl, add the water, olive oil, vinegar, and salt.
  • Gradually add the flour while mixing and kneading until you have a dough that doesn’t stick to your hands.
  • Lightly oil the bowl, place the dough inside, and let it rest while preparing the filling.
  • Filling
  • In a bowl, mix the heavy cream with the cream cheese.
  • Add pepper, thyme, anthotyro, regato, and crumbled feta.
  • Mix gently using a spatula.
  • Phyllo Sheets & Assembly
  • Divide the dough into 6 equal pieces.
  • Dust the counter with cornstarch and roll out the first piece into a round sheet slightly larger than a 35 cm / 14 inch baking tray.
  • Grease the tray with olive oil and place the first sheet inside. Drizzle lightly with olive oil.
  • Repeat with the second sheet.
  • Add the filling and spread evenly.
  • Fold the edges of the second sheet inward.
  • Roll out the third sheet, place it on top, and drizzle with olive oil.
  • Roll out the remaining three sheets and place them crinkled on top, drizzling olive oil between layers.
  • Score the pie into portions.
  • Lightly spray with water and optionally sprinkle with sesame seeds.
  • Bake in a preheated oven at 200°C / 390°F (conventional heat) for 60–70 minutes, until beautifully golden.
