This Traditional Greek Chickpea Stew Is Pure Comfort Food

Slow-cooked for hours until creamy, rich, and deeply flavorful, this is the kind of food that fills the house with incredible aromas.

Sifnos revithada is one of Greece’s most beloved island dishes, known for its simplicity and comforting texture.

And despite using only a few ingredients, the flavor becomes unbelievably rich after hours in the oven.

Why Slow Baking Makes All the Difference

The secret to authentic revithada is low and slow cooking.

As the chickpeas bake for hours:

  • they become creamy inside
  • the broth thickens naturally
  • the onions melt into the sauce

This creates that famous velvety texture without needing cream or heavy ingredients.

The Traditional Sifnos Method

On the Greek island of Sifnos, revithada is traditionally baked overnight in a clay pot inside a wood-fired oven.

This homemade version recreates that same comforting flavor using a Dutch oven or oven-safe pot.

Tips for Perfect Revithada

For best results:

  • soak the chickpeas properly
  • rinse the baking soda thoroughly
  • cook slowly at low temperature
  • keep the pot covered

The longer, gentler cooking is what gives revithada its famous texture.

What to Serve with Revithada

Perfect with:

  • crusty bread
  • olives
  • feta cheese
  • fresh lemon juice

Simple Mediterranean food at its best.
