Ingredients

  • 500 g 1 lb Dried Chickpeas with skin

  • 15-20 g 1 Salt

  • 1 tsp 1 tsp Baking Soda

  • 2 2 Large Onions, sliced into rings

  • 1 tsp 1 tsp Thyma

  • Black Pepper

  • 100-120 g 1/2 Olive Oil

  • 2 liters 8 cup Water

  • Lemon wedges, for serving

How to make Greek Revithia

  • Preparing the Chickpeas
  • Soak the chickpeas overnight in plenty of water.
  • The next day, drain the chickpeas and add the baking soda.
  • Preheat the oven to 200ยฐC / 390ยฐF.
  • Rub the chickpeas gently with your hands and let them sit for 20 minutes.
  • Rinse very well to remove all traces of baking soda.
  • Baking the Revithada
  • Transfer the chickpeas to a Dutch oven or clay pot.
  • Add salt, pepper, olive oil, onions, and thyme.
  • Add enough water to fully cover the chickpeas.
  • Cover with the lid.
  • Place the pot on the lower rack of the oven.
  • Reduce temperature to 120โ€“150ยฐC / 250โ€“300ยฐF.
  • Bake slowly for about 5 hours.
  • Serve with fresh lemon.
