Ingredients
- For the Fritters
800 g 1.8 lb Zucchini (about 4 zucchini), grated
2 2 Carrots, grated
1 1 Potato, grated
3 3 Eggs
5-6 5-6 Spring Onions (or 1 large onion), finely blended
5 sprigs 5 sprigs Parsley, finely chopped
5 sprigs 5 sprigs Dill, finely chopped
Salt and Black Pepper
20 20 Mint Leaves (or 1 tsp dried mint), finely chopped
300 g 2 1/2 cup Self-rising Flour
250 g 9 oz Feta Cheese, crumbled
200 g 7 oz Grated Melting Cheese
170 g 3/4 cup Olive Oil
- For the Coating
200 g 2 cup Breadcrumbs
100 g 1 cup Grated Cheese
Recipe directions
- Prepare the Vegetables
- Grate the zucchini, potato, and carrots using the fine side of a grater.
- Transfer them to a bowl.
- Sprinkle with salt and mix gently.
- Place the vegetables in a colander over a bowl.
- Allow them to drain and release excess moisture.
- Prepare the Mixture
- In a large bowl, add the parsley, dill, mint, and onion.
- Beat the eggs and add them to the bowl.
- Add the olive oil and grated cheeses.
- Mix well.
- Squeeze the excess liquid from the zucchini, potato, and carrots.
- Add them to the bowl.
- Add black pepper, feta cheese, and flour.
- Mix until combined.
- Let the mixture rest for 10 minutes.
- Prepare the Coating
- In a shallow tray, combine the breadcrumbs and grated cheese.
- Mix well.
- Shape and Coat
- Shape the mixture into fritters weighing approximately 70 g each.
- Roll each fritter in the breadcrumb and cheese mixture until fully coated.
- Place them on a baking tray lined with parchment paper.
- Drizzle lightly with olive oil.
- Bake
- Bake in a preheated oven at 400°F (200°C) using conventional top and bottom heat for 25 minutes.
- Sprinkle the fritters with a little extra grated cheese.
- Continue baking for another 15 minutes, until golden and crispy.
- Serve warm.
