Quick and easy ham and cheese pie made with tortillas instead of phyllo. Just 5 minutes of prep time for a cheesy, golden, and satisfying dish.

Ingredients

  • 3 3 Tortillas

  • 3 3 Eggs

  • 300 g 1 1/4 cup Milk

  • Salt and Pepper, to taste

  • 1 tsp 1 tsp Smoked Paprika

  • 1 pinch 1 pinch Dried Thyme

  • 40 g 3 tbsp Olive Oil

  • 200 g 7 oz Ham (or turkey) cubed

  • 70 g 2.5 oz Bacon, cubed (optional)

  • 500 g 17 oz Melting Cheese Mix, grated

  • 2 tbsp 2 tbsp All-purpose Flour

  • 1 tsp 1 tsp Baking Powder

How to make the Tortilla Pie

  • In a bowl, whisk together milk, eggs, olive oil, salt, pepper, paprika, and thyme.
  • Dip the tortillas into the mixture and set aside.
  • Cut the ham (or turkey) and bacon into small cubes.
  • Line a 26 cm (10-inch) springform pan with parchment paper, leaving extra overhang to hold the liquid.
  • Place the first tortilla in the pan. Top with ⅓ of the cheese and half of the meats.
  • Add the second tortilla, more cheese, and the remaining meats.
  • Place the third tortilla on top and sprinkle with the rest of the cheese.
  • Into the leftover egg mixture, stir in the flour and baking powder. Mix well.
  • Pour this mixture over the pie.
  • Preheat oven to 170°C (340°F), bake on the middle rack for 45 minutes.
  • (Optional) Add extra cheese on top for the last 15 minutes.
  • Let cool slightly before removing from the pan.
