Ingredients
- Dough
1 kg 8 cup All-purpose Flour
300 g 1 1/4 cup Milk
300 g 1 1/4 cup Water, lukewarm
1 tbsp 1 tbsp Sugar
75 g 2 1/2 oz Fresh Yeast (or 21 g Dry Yeast)
1 tbsp 1 tbsp Salt
120 g 1/2 cup Melted Butter or Vegetable Oil
1 1 Egg
- Coating
1 tbsp 1 tbsp Sugar
200-300 g 3/4 – 1 1/4 Lukewarm Water
Sesame Seeds
- Filling
300 g 10 1/2 oz Ham
400 g 14 oz Grated Melting Cheese
Recipe directions
- Prepare the Starter
- In a bowl, combine the sugar, lukewarm milk, and fresh yeast (or dry yeast).
- Stir until dissolved.
- Add 4 tablespoons of the flour.
- Mix well and let the mixture rest until the yeast becomes active.
- Prepare the Dough
- In a large bowl, combine the salt, egg, lukewarm water, the remaining flour, and the prepared yeast mixture.
- Mix with a spatula until the dough comes together.
- Lightly grease your hands with melted butter or oil to prevent sticking.
- Knead briefly until smooth.
- Cover the dough and let it rise in a warm place until doubled in size.
- Shape the Rolls
- Transfer the dough to a lightly floured work surface.
- Knead gently to release excess air.
- Divide the dough into 80 g portions.
- Flatten each portion into a round using your hands.
- Place a little grated cheese and ham in the center.
- Fold the dough over the filling and seal the edges tightly.
- You can also use sweet or savory fillings of your choice.
- Coat the Rolls
- In a bowl, combine the lukewarm water and sugar.
- Dip each bread roll into the mixture.
- Coat with sesame seeds.
- Final Rise & Bake
- Arrange the rolls on a parchment-lined baking tray, leaving space between them.
- Let them rise for at least 20 minutes.
- Bake in a preheated oven at 350°F (180°C) using conventional top and bottom heat for approximately 30 minutes, or until golden brown.
