Florentines are one of the most elegant Greek biscuits known for their delicate crunch, buttery caramel flavor, and rich chocolate coating. Despite their impressive appearance, they’re surprisingly easy to prepare with just a handful of pantry ingredients.
Almond Florentine Biscuits with Chocolate

Ingredients
300 g 300 Sliced Almonds
200 g 200 Granulated Sugar
50 g 50 Honey
50 g 50 Glucose Syrup
100 g 100 Butter or Margarine
1 pinch 1 Salt
- Chocolate Coating
150 g 150 Dark Couverture Chocolate
Recipe directions
- Preheat the oven to 180°C (350°F) using conventional heat.
- Line a 37 × 25 cm (15 × 10 inch) baking tray with parchment paper.
- Place the sugar, honey, glucose syrup, butter, and salt into a large skillet over low heat.
- Stir continuously until the sugar has completely dissolved and the mixture begins to develop a light caramel color.
- Remove the pan from the heat and immediately stir in the sliced almonds until evenly coated.
- Spread the mixture evenly onto the prepared baking tray.
- Bake for 15 minutes, or until golden brown. Watch carefully during the last few minutes, as the almonds can burn quickly.
- Allow the Florentine sheet to cool for about 5 minutes.
- While still warm, cut into squares or use cookie cutters dipped in cold water to create decorative shapes.
- Let the Florentines cool completely.
- Melt the chocolate using a double boiler or microwave in short intervals.
- Dip one side of each Florentine into the melted chocolate and place on parchment paper until set.
