This traditional Greek dessert combines fluffy cakes with a creamy filling and a glossy chocolate topping, making it an irresistible treat for any occasion.

Ingredients

  • For the Syrup
  • 300 g 10.6 oz Water

  • 300 g 10.6 oz Sugar

  • Juice of half a Lemon

  • For the Dough
  • 130 g 4.6 oz Sugar

  • 6 6 Egg Yolks

  • 6 6 Egg Whites

  • A pinch of Salt

  • 220 g 77.8 oz Self Raising Flour

  • 1 1 Vanillin

  • For the Cream
  • 600 g 21.2 oz Milk

  • 100 g 3,5 oz Heavy Cream

  • 120 g 4.2 oz Sugar

  • 2 2 Egg Yolks

  • 50 g 1.8 oz Corn Starch

  • 2 2 Vanillins

  • 140 g 5 oz Butter (cold)

  • For the Chocolate Glaze
  • 300 g 10.6 oz Milk Chocolate

  • 50 g 1.8 oz Heavy Cream

  • 20 g 0.7 oz Vegetable oil

Recipe directions

  • For the Syrup
  • In a small saucepan, add the water, sugar, and lemon juice, and stir gently. Place the saucepan over heat, bring it to a boil, and simmer for 1 minute. Set it aside to cool.
  • For the Cream
  • Place a saucepan over medium heat. Add the milk, egg yolks, sugar, and cornstarch, and stir constantly to prevent sticking, until the cream thickens. Remove from heat.
  • Add the vanilla extract and butter, and stir until combined.
  • Transfer the cream to a tray and cover it with plastic wrap, making sure the wrap touches the surface of the cream to prevent a skin from forming.
  • Place the tray with the cream in the fridge.
  • For the Dough
  • In the mixer bowl, add the egg whites and whisk them until stiff peaks form, creating a meringue. Transfer the meringue to a separate bowl.
  • In the same mixer bowl, add the egg yolks, sugar, a pinch of salt, and vanilla extract, and beat for 2-3 minutes.
  • Gradually fold the meringue into the mixture, using a spatula and mixing gently in circular motions.
  • Sift the flour into the mixture in two batches, folding it in gently as you continue to mix.
  • Transfer the batter to a piping bag.
  • Line a baking sheet with parchment paper. Pipe small cake shapes onto the sheet.
  • Preheat the oven to 180°C (350°F) and bake for 10-12 minutes.
  • For the Chocolate Glaze
  • In a bowl, add the heavy cream, and top it with the milk chocolate, broken into small pieces. Add the vegetable oil.
  • Cover the bowl with plastic wrap and heat in the microwave until the chocolate is melted.
  • To Assemble
  • Remove the cream from the fridge and transfer it to the mixer bowl. Beat lightly, gradually adding the heavy cream while mixing.
  • Transfer the cream to a piping bag.
  • Dip each cake piece in the syrup. Pipe some cream onto one piece and cover it with another.
  • Dip the top cake in the chocolate glaze, fully covering the top half.
  • Let the chocolate puffs cool completely.
