Ingredients

  • For the Pirozhki
  • 500 g All purpose flour

  • 200 g Milk, lukewarm

  • 50 g Fresh yeast (or 16 g dry yeast)

  • 30 g Sugar

  • 10 g Salt

  • 50 g Butter

  • 2 Eggs

  • Seed oil for frying

  • For the filling
  • 300 g Ground beef

  • 3 Onions, coarsely chopped

  • 3 Garlic cloves, finely chopped

  • 50 g Olive oil

  • 1 tsp Tomato paste

  • Salt and Pepper

Recipe directions

  • For the Pirozhki
  • In the mixer’s bowl, combine sugar, milk, and yeast; mix well. Place the flour on top without mixing; instead, cover the liquids. Set it aside for 15 minutes to allow the yeast to activate.
  • 15 minutes later, add the eggs, a pinch of salt, the butter and beat in the mixer for 5 minutes.
  • Cover the bowl with a towel and set it aside while preparing the filling.
  • For the Filling
  • Place a pot over heat. Add the ground beef, onions, garlic, season with salt and pepper, add the olive oil and saute.
  • Add the tomato paste and continue sautéing for 1 minute.
  • Transfer the mixture to a bowl and let it cool
  • To assemble
  • Divide the dough into 10 equal parts.
  • Roll out each portion of the dough, add some filling, and roll it up, sealing the edges well.
  • Cooking the Pirozhki
  • Heat seed oil in a pot until it reaches the desired temperature.
  • Carefully add the pirozhki to the hot oil and fry until golden brown.
