Greek Kaimaki Ice Cream made with only 2 ingredients. A creamy, soft homemade mastic ice cream with no ice cream machine required.

Ingredients

  • 1 liter 4 1/4 cup Heavy Cream

  • 400 g 14 oz Mastic Spoon Sweet

  • Optional
  • A small amount of mastic powder for a stronger aroma

Recipe directions

  • Prepare the Ice Cream Base
  • Pour the heavy cream into a saucepan.
  • Place over medium heat.
  • Add the mastic spoon sweet.
  • Stir continuously until the spoon sweet has completely dissolved.
  • Optionally add a small amount of mastic powder for a more intense flavor.
  • Once fully dissolved, remove the saucepan from the heat.
  • Transfer the mixture to a container.
  • First Freezing
  • Cover the container with its lid.
  • Freeze for approximately 3 hours.
  • Whip the Mixture
  • Transfer the partially frozen mixture to the bowl of a stand mixer.
  • Beat for approximately 5 minutes until light and fluffy.
  • Alternatively, use a hand mixer.
  • Final Freezing
  • Transfer the mixture back to the container.
  • Cover the surface directly with plastic wrap so it touches the ice cream.
  • Freeze until completely firm.
