Ingredients

  • For the Dough
  • 200 g 7 oz Milk

  • 8 g 8 Dry yeast

  • 7 g 7 Sugar

  • 7 g 7 Salt

  • 50 g 50 Seed oil

  • 200 g 200 Yogurt

  • 750 g 750 All purpose flour

  • 250 g 250 Margarine

  • For the Filling
  • 200 g 200 Mozzarella Cheese, grated

  • 250 g 250 Feta Cheese, broken into small pieces

  • 200 g 200 Cheddar Cheese, grated

  • 1 1 Red bell pepper, cut into small cubes

  • Pepper

  • 1 1 Egg for coating

Recipe directions

  • In a bowl add the sugar, milk, dry yeast and mix.
  • Add the seed oil, yogurt and mix.
  • Add the margarine, salt, flour and mix well. Knead the dough for 2-3 minutes.
  • Divide the dough into two equal parts. Transfer them to a bowl, cover with a towel and set aside for a few minutes.
  • Roll out the first piece of dough with your hands by pressing it.
  • Transfer the dough to a 12 in (30 cm) diameter round baking pan. Press the dough with your hands to fit into the baking pan.
  • Spread the mozzarella evenly over the dough. Add some pepper.
  • Spread the red bell pepper evenly over the cheese. Next add the feta and cheddar cheese.
  • Roll out the second piece of dough. Carefully lift the rolled-out dough and place it in the baking pan, making sure it covers the entire pie. Gently press and seal the edges of the two sheets of dough together to create a seamless, unified crust for the pie.
  • Make shallow cuts or incisions on the surface of the dough, dividing it into individual serving-sized pieces. These cuts will help the dough bake evenly and make it easier to portion once it’s cooked.
  • Crack an egg into a bowl and use a fork or a small whisk to beat it until it’s well mixed. With a pastry brush, gently apply the beaten egg over the surface of the dough, ensuring an even and thin layer of egg wash.
  • Preheat the oven to 355 F (180 C) and bake for 40-50 minutes.
