This Greek potato skordalia is creamy, smooth, and perfectly balanced without bitterness. A traditional garlic dip made with potatoes, olive oil, and vinegar – ideal for seafood and vegetables.

Ingredients

  • 140 g 2/3 cup Olive Oil

  • 40 g 2 1/2 tbsp Vinegar

  • 1 tbsp 1 tbsp Salt

  • 4 4 Garlic Cloves

  • 700 g 1 1/2 lb Potatoes, peeled and cut into pieces

  • Reserved potato cooking water (if needed)

How to make Greek Potato Garlic Dip

  • Place a pot over heat, add the potatoes and salt, and cover with water.
  • Boil for about 25 minutes until the potatoes are tender.
  • Transfer the potatoes to a bowl and mash them. Do not discard the cooking water.
  • Peel the garlic and remove the inner sprouts.
  • In a food processor, blend the garlic with the olive oil and vinegar until smooth.
  • Add part of the mashed potatoes and blend everything together.
  • Transfer the mixture back to the bowl with the remaining potatoes and mix well using a spatula.
  • If the mixture thickens as it cools, add a little of the reserved potato water and mix until smooth.
  • Transfer to a bowl and store in the refrigerator.
