Ingredients

  • 2 kg 4.4 lb Apples (1.5 kg peeled and cored)

  • 1 kg 4 1/2 cup Sugar

  • Juice of 1 1/2 Lemons

  • 1 tsp 1 tsp Vanilla Extract (or 2 vanillin capsules)

  • 2 2 Cinnamon Sticks

How to make Apple Cinnamon Jam

  • In a bowl, combine 2 liters (8 cups) of water with the juice of half a lemon.
  • Peel and core the apples, slice them thinly, and add them to the bowl to prevent browning.
  • Transfer the apples to a large pot, adding about 2 ladles of the soaking water.
  • Cover and simmer over medium heat for 15 minutes.
  • Add the cinnamon sticks and continue cooking for another 15 minutes.
  • Transfer the apples and remaining liquid to a food processor or blender and purรฉe until smooth.
  • Return the purรฉe to the pot and bring back to a gentle boil.
  • Add the sugar and stir until fully dissolved.
  • Simmer over low heat for 20 minutes, stirring occasionally.
  • Add the juice of one lemon and the vanilla, stir, and simmer for 1 more minute.
  • Pour the jam into sterilized jars, seal, and let cool completely before storing.
