This homemade mozzarella cheese is soft, stretchy, and perfect for pizza, salads, and sandwiches. Easy method using store-bought milk with authentic results.

Ingredients

  • 5 liters 169 fl oz Pasteurized, homogenized Milk (Do NOT use ultra-pasteurized milk)

  • 2 tsp 2 tsp Citric Acid

  • 300 g 1 1/4 cup Water

  • 1 tsp 1 tsp Liquid Rennet

  • 5 tbsp 5 tbsp Salt

How to make Homemade Mozzarella

  • Preparing the Milk
  • In a bowl, mix 200 g (ยพ cup) water with the citric acid and add it to the pot.
  • In another bowl, mix 100 g (โ…“ cup + 1 tbsp) water with the liquid rennet. Set aside.
  • Add the cold milk to the pot.
  • Heat gently over low heat to 30ยฐC / 86ยฐF, stirring lightly.
  • Turn off the heat.
  • Coagulation
  • Add the rennet mixture and stir gently.
  • Cover and let sit for 1 hour until the milk sets.
  • Cutting & Heating
  • Cut the curd with a knife and loosen the edges with a spatula.
  • Heat gently to 40ยฐC / 104ยฐF, stirring carefully from bottom to top.
  • Turn off heat, cover, and let rest for 10 minutes.
  • Draining
  • Transfer the curds to a strainer and let drain for 30 minutes.
  • Preparing the Whey
  • Add salt to the whey (1 tbsp per liter of milk used).
  • Heat the whey to 80โ€“85ยฐC / 175โ€“185ยฐF.
  • Stretching the Cheese
  • Take a portion of cheese and squeeze out excess liquid.
  • Dip it into the hot whey for a few seconds.
  • Remove and squeeze again.
  • Flatten, fold, and stretch.
  • Repeat dipping and folding 2โ€“3 times until elastic.
  • Final Shaping
  • Form into a ball.
  • Place in a bowl with ice water to set.
  • Transfer to paper towels to dry.
  • Wrap in plastic and refrigerate for at least 2 hours.
