Nothing compares to the flavor of a homemade chicken pie made with traditional olive oil phyllo. The crispy, flaky layers and rich filling create one of the most comforting dishes in Greek cuisine.
Homemade Chicken Pie with Traditional Hand-Rolled Phyllo

Ingredients
- For the Dough
360 ml 1 1/2 cup Lukewarm Water
180 ml 3/4 cup Olive Oil
1 1/2 tsp 1 1/2 tsp Salt
800 g 6 1/2 cup All-purpose Flour
- For the Filling
400 g 14 oz Cooked Chicken, diced or shredded
1 1 Red Bell Pepper, diced
1 1 Green Bell Pepper, diced
1 1 Orange Bell Pepper, diced
1 1 Medium Tomato, diced
1 1 Medium Onion, finely chopped
100 g 3 1/2 oz Smoked Ham, diced
6 tbsp 6 tbsp Olive Oil
6 tbsp 6 tbsp Heavy Cream
200 g 7 oz Grated Cheese
Recipe directions
- Prepare the Dough
- In a large bowl, combine the warm water, olive oil, and salt.
- Gradually add the flour, mixing until you have a soft, smooth dough that no longer sticks to your hands.
- Cover the dough and let it rest for 1 hour.
- Prepare the Filling
- Heat the olive oil in a large skillet.
- Sauté the onion and bell peppers until softened.
- Add the smoked ham and cook for another 2–3 minutes.
- Stir in the cooked chicken and diced tomato.
- Add the heavy cream, stir well, and cook for another minute.
- Remove from the heat and allow the filling to cool completely.
- Assemble the Pie
- Divide the dough into 7 equal balls.
- Roll out the first three balls into thin sheets, lightly brushing each layer with olive oil.
- Spread half of the filling over the third sheet.
- Sprinkle half of the grated cheese on top.
- Place the fourth sheet over the filling without brushing it with oil.
- Add the remaining filling and the remaining cheese.
- Roll out and layer the final three sheets, lightly brushing each one with olive oil.
- Seal the edges and score the top into portions.
- Bake in a preheated oven at 190°C (375°F) using conventional heat for approximately 1 hour and 10 minutes, or until deeply golden and crispy.
