This easy-to-follow Khachapuri recipe combines fluffy dough with a melty cheese center, topped with smoked paprika for added flavor. Baked until golden, this cheesy bread is ideal for a hearty snack or a crowd-pleasing appetizer.

Ingredients

  • For the Dough
  • 430 g 15.2 oz All-Purpose Flour

  • 250 g 8.8 oz Milk (lukewarm)

  • 7 g 0.25 oz Dry Yeast

  • 1 tbsp 1 tbsp Sugar

  • 1 tsp 1 tsp Salt

  • 30 g 1 oz Olive Oil

  • 1 1 Egg

  • For the Filling
  • 400 g 14 oz Meltable Cheese (grated)

  • For the Coating
  • Smoked Paprika

  • 200 g 7 oz Meltable Cheese (grated)

How to make Khachapuri

  • In a bowl, add the sugar, lukewarm milk, and yeast, and mix.
  • Gradually add the flour while stirring. Once you achieve a batter-like consistency, add the egg, salt, and mix again.
  • Add the remaining flour and olive oil, and knead until you have a dough that doesn’t stick to your hands.
  • Cover the bowl with a towel and let the dough rise for 30 minutes.
  • Next, transfer the dough to a floured surface and knead briefly to release the air.
  • Divide the dough into two equal parts.
  • Roll out each dough piece into a sheet about 1 cm thick.
  • Place half of the grated cheese in the center of the dough sheet. Fold the dough around the cheese to form a pouch, and seal it well.
  • Use a rolling pin to flatten the dough into a circle approximately 30 cm in diameter.
  • Place the dough onto a baking tray lined with parchment paper. Repeat the process with the second piece of dough.
  • Let the breads rest for 20 minutes.
  • In a bowl, mix one egg with a shot of water, and brush this mixture over the breads.
  • Sprinkle with smoked paprika and grated cheese.
  • Preheat the oven to 200°C (390°F) and bake for 25 minutes using top and bottom heat.
