  • For the cookies dough
  • 2 2 Eggs

  • 130 g 4.6 oz Icing sugar

  • 250 g 8.8 oz Butter, at room temperature

  • 2 2 Vanillins

  • 400 g 14 oz Self raising flour

  • 7 g 0.2 oz Baking powder

  • For the filling
  • 200 g 7 oz Jam of your choice

  • For the chocolate coating
  • 300 g 10.6 oz Milk chocolate couverture

  • 20 g 0.7 oz Seed oil

Recipe directions

  • Making the Cookies
  • In the mixer’s bowl add the eggs, icing sugar and beat.
  • While beating, add the vanillins and butter.
  • In a bowl, mix the baking powder with the self-raising flour. Gradually add this mixture to the mixer’s bowl while continuing to beat.
  • Transfer the mixture to a pastry bag.
  • Shape the cookies using the pastry bag on a baking sheet lined with parchment paper.
  • Preheat the oven to 180 C (355 F) and bake the cookies for 10-15 minutes.
  • Do not touch the cookies until they’re cold.
  • Filling the cookie with jam
  • Take one cookie and spread jam on it. Then, cover it with another cookie.
  • For the chocolate coating
  • In a microwave-safe bowl, add the chocolate couverture broken into small pieces and mix in the seed oil. Melt the chocolate in the microwave for 1 to 2 minutes.
  • Dip half of the cookie into the melted chocolate.
