Ingredients

  • 200 g 200 Milk

  • 250 g 250 Cream Cheese

  • 500 g 500 Feta Cheese, crumbled

  • 250 g 250 Melting cheese, grated

  • 1/2 tsp 1/2 Smoked Paprika

  • 1 pinch 1 Ground Nutmeg (optional)

  • Black Pepper, to taste

  • 100 ml 100 Water

  • 200 g 200 Melted Butter (or margarine or vegetable oil)

  • 1 pack 1 Phyllo Sheets, cut in half

  • Sesame Seeds, for sprinkling

  • Water, for spraying

How to make the Cheese Pie

  • In a bowl, whisk milk with cream cheese until smooth.
  • Add shredded mozzarella, crumbled feta, pepper, nutmeg, smoked paprika, and water. Mix well.
  • Grease a 25×35 cm (10×14 in) baking dish with melted butter.
  • Layer 8 phyllo half-sheets in the dish, brushing with melted butter between layers to create a base “nest.”
  • Spread the cheese mixture evenly over the base.
  • Cover with 4 more phyllo sheets, folding edges inward.
  • Crumple remaining sheets into strips and arrange them over the top for a rustic look.
  • Brush generously with melted butter.
  • Place the pan in the freezer while preheating the oven.
  • Preheat oven to 160°C / 320°F (bottom/top heat).
  • Score pie into pieces, spray lightly with water, sprinkle with sesame seeds.
  • Bake for about 70 minutes until golden and crispy.
