Ingredients

  • For the Vanilla Cream
  • 2 2 Eggs

  • 100 g 100 Sugar

  • 250 g 250 Cold Milk

  • 20 g 20 Cornstarch

  • 30 g 30 Butter

  • 1 1 Vanillin Capsule

  • 1 pinch 1 Salt

  • For the Cake
  • 5 5 Eggs

  • 300 g 300 Sugar

  • 1 pinch 1 Salt

  • 2 2 Vanillin Capsules

  • 250 g 250 Melted Butter, or margarine

  • 300 g 300 Milk

  • 500 g 500 Self-rising Flour (or all-purpose flour + 2 1/2 tsp baking powder)

  • 4 4 Apples

How to make Apple Cake

  • Prepare the Cream
  • In a saucepan, add 2 eggs, 100 g sugar, and a pinch of salt and stir.
  • Add 20 g cornstarch, 250 g cold milk, 1 vanilla capsule and mix well.
  • Transfer the saucepan to medium heat and stir continuously until the cream starts to thicken.
  • When it starts to thicken, turn off the heat, add the butter and mix.
  • Transfer the cream into a piping bag.
  • For the Cake
  • In a bowl, mix cold water and the juice of half a lemon.
  • Peel 4 apples, remove the cores, and cut them into small cubes.
  • Place them in the bowl with the water.
  • In another bowl, add 5 eggs, 300 g sugar, a pinch of salt and beat with a mixer for 4–5 minutes.
  • Add 250 g melted butter or margarine and mix.
  • Add 2 vanilla capsules and mix, adding gradually and alternately the 300 g milk and the 500 g self-rising flour.
  • Drain the apples from the water and add them to the cake mixture.
  • Gently mix with a spatula to incorporate the apples into the batter.
  • Butter and flour a 25×35 cm baking pan, pour in the mixture and spread evenly.
  • On top, using the piping bag, add the cream in diagonal lines.
  • Bake in a preheated oven at 160°C (bottom/top heat) for 70 minutes.
  • Once the cake has cooled, sprinkle with powdered sugar and cinnamon.
