Ingredients

  • For the Syrup
  • 460 g 2 cup Sugar

  • 500 g 2 cup Water

  • Juice of 1/2 Lemon

  • 1 tsp 1 tsp Rose Essence or Vanilla Extract or 2 Vanilla Capsules

  • For the Cookies
  • 230 g 1 cup Corn Oil

  • 230 g 1 cup Sugar

  • 2 2 Vanilla Capsules

  • 330 ml 1 1/3 cup Beer (with or without alcohol)

  • 1 pinch 1 pinch Salt

  • 1/2 cup 1/2 cup Fine Semolina

  • 2 tsp 2 tsp Baking Powder

  • 750 g 7 cup All-purpose Flour

  • Loukoumi (turkish delight)

  • For Coating
  • Shredded Coconut

Recipe directions

  • Prepare the Syrup
  • Place a saucepan over medium heat and add sugar, water, lemon juice.
  • Bring to a boil and simmer for 2 minutes.
  • Remove from heat and add the rose essence or vanilla. Stir well.
  • Set the syrup aside until lukewarm.
  • Prepare the Dough
  • In a large bowl combine corn oil, sugar, vanilla, beer, salt, semolina.
  • Mix well.
  • Add the baking powder and flour.
  • Knead until you obtain a soft dough that does not stick to your hands.
  • Let the dough rest for 20 minutes.
  • Shape the Cookies
  • Divide the dough into pieces of about 40 g each and roll them into balls.
  • Cut the loukoumi pieces in half.
  • Flatten each dough ball slightly, place the loukoumi in the center, and seal the dough around it.
  • Place the cookies on a parchment-lined baking tray, leaving some space between them.
  • Bake in a preheated oven at 350ยฐF (180ยฐC), conventional heat, on the middle rack for about 30 minutes.
  • Syrup Soaking
  • Dip the hot cookies into the lukewarm syrup for about 40 seconds.
  • Remove and roll them in shredded coconut.
  • Place each cookie in a paper liner and allow them to cool completely.
