What Is Fanouropita?
Fanouropita is a traditional Greek fasting cake associated with Saint Phanourios (Agios Fanourios). It is traditionally prepared without eggs or dairy products and is commonly made in Greece around the saint’s feast day on August 27, although it can be enjoyed throughout the year.
Its name comes from the Greek verb fanerono, meaning “to reveal.” According to Greek tradition, people prepare Fanouropita while asking Saint Phanourios to help reveal something that has been lost or to provide guidance.
Why This Fanouropita Is Different
Most Fanouropita recipes rely on familiar aromas such as orange and cinnamon. This version takes a different direction by using anise seeds, which give the cake a distinctive aromatic character.
Almond milk replaces dairy milk, keeping the recipe suitable for fasting and dairy-free diets, while the combination of almond milk and vegetable oil helps the cake remain soft.
How to Keep Fanouropita from Crumbling
The mixing method is particularly important in this recipe. Adding the vegetable oil gradually to the almond milk while continuously mixing helps create a more homogeneous base before the dry ingredients are added.
Once the flour goes in, mix only as much as necessary for it to become incorporated. Overmixing the batter at this stage is unnecessary.
Another important step is to let the Fanouropita cool completely before cutting it. The crumb continues to set as the cake cools, making it easier to slice cleanly.
How to Tell When It Is Ready
Because ovens vary, start checking the cake toward the end of the suggested 40–45 minute baking time.
Insert a toothpick or wooden skewer into the center. It should come out clean or with only a few dry crumbs attached.
Allow the cake to cool before adding the powdered sugar, otherwise the sugar can absorb moisture and disappear into the surface.
