Embark on a culinary journey with our Greek Old Rag Pie recipe. Ingredients

  • 450 g 1 lb Phyllo Dough

  • 4 4 Eggs

  • 200 g 7 oz Milk

  • 50 g 1.8 oz Sunflower Oil

  • 1/2 tsp 1/2 tsp Baking Powder

  • 200 g 7 oz Ham (optional)

  • 200 g 7 oz Mozzarella Cheese, grated

  • 50 g 1.8 oz Cheddar Cheese, grated

  • 500 g 17.6 oz Feta Cheese

  • Salt & Pepper

  • Extras
  • 150 g 5.3 oz Seed oil (to brush the phyllo sheets)

Recipe directions

  • In a bowl add the eggs, milk, sunflower oil and mix well.
  • Reserve a small portion of the mixture in a bowl.
  • Add the mozzarella cheese, cheddar cheese, baking powder to the remaining mixture, season with salt and pepper and stir.
  • Add the ham, feta cheese and stir. Set the mixture aside.
  • Grease a baking dish with seed oil.
  • Place one phyllo sheet in the baking dish and brush it with some seed oil. Repeat this process for another two phyllo sheets.
  • Take one sheet, brush it with oil, crumple it into a ball, and place it in the baking dish. Repeat this process for another 7 sheets.
  • Pour the mixture into the baking dish and spread it evenly.
  • Take each remaining sheet one by one, brush them with oil, and place them in the baking dish crumpled into strips.
  • Brush the top layer of the sheets with the reserved mixture.
  • Baking the Pie
  • Preheat the oven to 180 C (355 F). Bake for about 40-50 minutes.
