Ingredients

  • For the Starter
  • 100 g 100 Fresh Yeast

  • 200 g 200 Milk, lukewarm

  • 100 g 100 Strong Bread Flour

  • 50 g 50 Sugar

  • For the Dough
  • 4 4 Eggs

  • 2 2 Egg Yolks

  • 250 g 250 Milk, lukewarm

  • 250 g 250 Sugar

  • 100 g 100 Honey

  • 3 3 Vanillin Capsules

  • 1 pinch 1 Salt

  • Zest of 1 Orange

  • 2 g 2 Mastic powder

  • 1200 g 1200 Strong Bread Flour

  • 250 g 250 Butter, melted

  • 20 g 20 Mahleb

  • Sliced Almonds for topping

How to make Greek Tsoureki

  • Starter
  • In a bowl, add the milk, 50 g sugar, and fresh yeast. Mix lightly.
  • Add 100 g flour and mix to form a batter.
  • Let it rest for 10 minutes until activated.
  • Dough Preparation
  • In a mixer bowl, add the sugar, eggs, egg yolks, honey, milk, salt, vanilla, mastic, and orange zest. Mix lightly.
  • Add the flour and the activated starter.
  • Mix in the mixer for 4โ€“5 minutes.
  • Transfer the dough to the counter and knead by hand for 2 minutes.
  • Return the dough to the mixer bowl, cover, and let it rest for 20 minutes.
  • Butter Incorporation
  • In a bowl, mix the melted butter with the mahleb.
  • Add 3 tablespoons of this mixture into the dough and mix on low speed.
  • Gradually add the remaining butter mixture while mixing.
  • Once incorporated, increase speed for 30 seconds.
  • First Rise
  • Transfer the dough to a bowl, score a cross on top, cover, and let it rise in a warm place for 2โ€“3 hours.
  • Shaping
  • Lightly knead the dough to deflate.
  • Divide into 5 equal pieces (5 loaves total).
  • Divide each piece into 3 smaller pieces.
  • Roll each into ropes.
  • Place the 3 ropes parallel and braid them into a loaf.
  • Press the ends together and tuck underneath.
  • Second Rise
  • Place on parchment-lined trays and cover.
  • Let rise for 45 minutes.
  • Baking
  • Lightly beat egg whites and brush the tsourekia.
  • Sprinkle with sliced almonds.
  • Bake in a preheated oven at 160ยฐC / 320ยฐF for about 25 minutes.
