Ingredients

  • 4-5 4-5 Large Quinces

  • 250 g 1 cup Red Wine

  • 80 g 1/3 cup Brandy

  • 100 g 1/2 cup Honey

  • 10 10 Cloves

  • 2 2 Cinnamon Sticks

  • 2 liters 8 cup Water

  • Juice of 1/2 Lemon

Recipe directions

  • In a bowl, mix 2 liters (8 cups) of water with lemon juice.
  • Wipe the quinces with a towel to remove the fuzz.
  • Cut into quarters, remove the seeds, and place in the lemon water to prevent browning.
  • Arrange the quince quarters in a baking dish, side by side.
  • Wrap the cinnamon sticks and cloves in cheesecloth, tie, and place in the center of the dish.
  • In a bowl, mix honey with cognac and drizzle over the quinces.
  • Pour red wine evenly over the top.
  • Cover the dish with parchment paper and foil.
  • Bake in a preheated oven at 200°C (390°F) (static heat) for 1 hour.
  • Uncover, remove the spice pouch, and carefully flip the quinces.
  • Bake uncovered for another 30 minutes, until golden, caramelized, and syrupy.
