Ingredients

  • 4 4 Eggplants (1.1 kg / 2.5 lb)

  • 4 4 Garlic Cloves, finely chopped

  • 1/2 bunch 1/2 Fresh Parsley, finely chopped

  • 1 1 Florina Red Pepper, finely chopped

  • Juice of 1 Lemon

  • Olive Oil, to taste

  • Salt & Pepper, to tast

How to make Greek Melitzanosalata

  • Pierce the eggplants well with a fork.
  • Roast them whole in the oven or on a grill until completely softened.
  • Cut them open and scoop out the flesh, avoiding excess seeds.
  • Immediately add the lemon juice or vinegar to prevent discoloration.
  • If desired, roast the Florina pepper first.
  • Add all remaining ingredients and mix well.
  • Taste and adjust salt and lemon as needed.
  • Serve chilled or at room temperature.
