Ingredients

  • For the phyllo dough
  • 600 g All purpose flour

  • 10 g Salt

  • 320 g Water

  • 30 g Olive oil

  • 10 g Vinegar

  • Olive oil to dip the dough

  • For the Filling
  • 600 g mixed cheese

  • 200 g Feta cheese

Recipe directions

  • In a bowl add the flour, vinegar, salt, olive oil, water and mix well using your hands.
  • Knead the dough.
  • Cut the dough into pieces of 5.3 oz (150 g) each. Form each piece of the dough into a ball.
  • In a bowl add some olive oil. Dip the dough pieces into the olive oil. Cover the bowl with a towel and set aside for 30 minutes.
  • Gently stretch each piece of dough using our hands until it becomes very thin. Please watch the video for the technique.
  • Add a bit of the grated mixed cheese and crumbled feta cheese on top of the dough.
  • Roll up the dough into a stick and transfer it to a round baking pan lined with parchment paper.
  • Repeat for each dough piece.
