Ingredients

  • 1500 ml Whole Milk

  • 30 g Lemon Juice

  • Optional
  • Salt

  • Spices and herbs of your choice

Recipe directions

  • Place a saucepan over the heat and add the milk. Wait for the milk to warm up and begin to steam.
  • Then, gradually pour in the lemon juice and stir with a spoon. Turn off the heat.
  • Let the mixture sit for 10-15 minutes to allow the milk to curdle.
  • Transfer the mixture to a sieve with a bowl underneath or to a cheesecloth-lined strainer to drain for about 15 minutes. Do not discard the liquid (whey) for now.
  • Transfer the cheese to a blender and add a pinch of salt. Blend the cheese.
  • Then add 2 tbsp of whey to the cheese and blend, checking the texture. Add more whey according to the desired creaminess of the cheese.
  • Finally, you can add any spice or herb you like to give the cheese the aroma and flavor you desire (e.g., paprika, thyme, etc.).
