  • For the Crust
  • 150 g 5.3 oz Vanilla Biscuits

  • 100 g 3.5 oz Unsalted Butter, melted

  • For the Lemon Cheesecake Filling
  • 500 g 19 oz Cream Cheese, room temperature

  • 300 g 1 1/4 cup Greek Yogurt

  • Powdered sugar, to taste

  • Juice of 2 Lemons

  • For Decoration
  • Zest of 2 Lemon

  • Zest of 2 Limes

How to make Lemon Cheese Cake

  • Prepare the Crust
  • Place the vanilla biscuits in a food-safe bag.
  • Crush them until they become fine crumbs.
  • Melt the butter and combine it with the crushed biscuits.
  • Line the base of a 22 cm (9-inch) springform pan or cake ring with parchment paper.
  • Press the biscuit mixture firmly into the bottom using a spoon or the bottom of a glass.
  • Refrigerate for approximately 30 minutes until firm.
  • Prepare the Filling
  • In the bowl of a mixer, gently beat the cream cheese, Greek yogurt, powdered sugar, and lemon juice.
  • Continue mixing until smooth and fluffy.
  • Pour the filling over the chilled crust.
  • Smooth the surface evenly.
  • Refrigerate for 3–4 hours, or until fully set.
  • Decorate and Serve
  • Just before serving, sprinkle with lemon zest and lime zest.
  • Slice and serve chilled.
