Traditional Greek Fanouropita made with nine main ingredients, ready for the oven in 5 minutes, it stays soft, fluffy, and easy to slice for days.

Ingredients

  • 160 g 160 Corn Oil

  • 350 g 350 Granulated Sugar + 100 g (3/4 cup) Powdered Sugar

  • 380 g 380 Fresh Orange Juice + Zest of 1 Orange

  • 1 tbsp 1 Ground Cinnamon

  • 1 pinch 1 Salt

  • 1 tsp 1 Baking Soda

  • 750 g 750 Self-rising Flour

  • 40 g 40 Brandy

  • 150 g 150 Dark Raisins

Recipe directions

  • Prepare the Wet Mixture
  • Add the granulated sugar and corn oil to a large mixing bowl.
  • Pour in a small amount of the measured orange juice.
  • Beat with a hand mixer or whisk until the sugar begins to dissolve.
  • Add the salt, ground cinnamon, and orange zest.
  • Stir with a spatula until combined.
  • Prepare the Raisins
  • In a separate bowl, combine the dark raisins and brandy.
  • Set them aside for a few minutes.
  • Finish the Batter
  • Stir the baking soda into the remaining orange juice.
  • Add the orange juice mixture to the large bowl and stir.
  • Measure the self-rising flour.
  • Remove approximately 2 tablespoons of flour and add it to the raisins.
  • Gradually add the remaining flour to the wet ingredients.
  • Mix until all the ingredients are incorporated and no dry flour remains.
  • Toss the raisins with the reserved flour until lightly coated.
  • Add the raisins and brandy to the batter.
  • Fold gently until the raisins are evenly distributed.
  • Prepare the Pan
  • Lightly grease a 30 × 30 cm (12 × 12-inch) baking pan with corn oil.
  • Line the bottom with parchment paper.
  • Transfer the batter to the pan.
  • Spread the surface evenly with a spatula.
  • Bake
  • Bake in a preheated oven at 340°F (170°C) fan-assisted, or 355°F (180°C) conventional.
  • Bake for approximately 40–50 minutes, until the cake is golden and fully baked in the center.
  • Check for doneness by inserting a skewer or toothpick into the center. It should come out clean or with a few moist crumbs.
  • Cool and Finish
  • Remove the Fanouropita from the oven.
  • Cover the pan with a clean kitchen towel and let the cake cool completely.
  • Dust generously with powdered sugar before slicing and serving.
