Ingredients

  • 40 g 1.4 oz Sugar

  • 5 5 Eggs

  • 7 g 0.2 oz Salt

  • 300 g 10.5 oz Milk, lukewarm

  • 100 g 3.5 oz Corn oil

  • 200 g 7 oz All purpose flour

  • 20 g 0.7 oz Baking powder

  • 400 g 14 oz Corn flour

  • 400 g 14 oz Yogurt

  • 1 tsp 1 tsp Baking soda

  • Juice of half a lemon

  • 300 g 10.6 oz Feta cheese

  • 150 g 5.3 oz Parmesan cheese, grated

Recipe directions

  • In a bowl add the sugar, eggs, milk and beat them using a whisk.
  • Add the salt, corn oil and mix.
  • Add the yogurt and mix.
  • In a separate bowl, mix the all-purpose flour with baking powder, and then add the mixture to the main bowl and mix.
  • In a bowl, combine the juice of half a lemon with baking soda, and then add the resulting mixture to the main bowl.
  • While mixing, gradually incorporate the corn flour.
  • Add the parmesan cheese and stir.
  • Crumble the feta into the mixture and stir.
  • Grease a baking dish and sprinkle it with some corn flour.
  • Pour the mixture into the baking dish and spread it evenly.
  • Optionally, add big chunks of feta on top of the mixture.
  • Preheat the oven to 180 C (355 F) and bake for 45 minutes.
