Lenten Raisin Bread is a soft, subtly sweet bread that combines the flavors of orange zest, cinnamon, and raisins, with the richness of tahini. These golden-brown braided breads are dairy-free and egg-free, making them ideal for fasting periods or for those following a vegan diet. Each bite is packed with flavor and texture, thanks to the carefully braided dough and the generous amount of raisins.

Ingredients

  • 1 kg 2 lb All Purpose Flour

  • 32 g 1.1 oz Dry Yeast – or 75 g (2.6 oz) Fresh Yeast

  • 60 g 2.1 oz Sugar

  • 3 3 Vanillins

  • 1 pinch 1 pinch Salt

  • 1 tsp 1 tsp Cinnamon Powder

  • Zest and Juice of 1 Orange

  • 250 g 8.8 oz Tahini

  • 550 g 19.4 oz Water (lukewarm)

  • 200 g 7 oz Black Raisins

Recipe directions

  • In a bowl, add the flour, sugar, vanilla, yeast, a pinch of salt, cinnamon, and orange zest. Mix lightly.
  • Add the orange juice and lukewarm water and mix.
  • Add some of the tahini and knead.
  • Spread the dough in the bowl and pour the remaining tahini and raisins in the center. Knead well for one minute to distribute the raisins throughout the dough.
  • Cover the bowl and set it aside for 40 minutes to allow the dough to rise.
  • Transfer the dough to a floured surface and knead lightly to deflate the dough.
  • Divide the dough into 50-gram pieces.
  • Roll each piece of dough into thin ropes.
  • Take three ropes and braid them together, sealing the ends.
  • Repeat with the remaining dough ropes.
  • Place the braided raisin breads on a baking sheet lined with parchment paper, leaving some space between them. Let them rest for 20 minutes to rise.
  • In a bowl, mix a little lukewarm water with a tablespoon of sugar.
  • Brush the raisin breads with the sugar water and sprinkle with sesame seeds.
  • Preheat the oven to 180°C (356°F) and bake for 25 minutes using top and bottom heating until golden brown.
