Ingredients

  • 1 kg 2 lb Soft Flour (type 550)

  • 530 g 18.7 oz Water (lukewarm)

  • 50 g 1.8 oz Fresh Yeast

  • 50 g 1.8 oz Olive Oil

  • 40 g 1.4 oz Sugar

  • 20 g 0.7 oz Salt

Recipe directions

  • In a mixer bowl, add sugar and lukewarm water. Crumble fresh yeast into the bowl and sprinkle 950g of flour over the mixture to cover it. Let it rest for 10 minutes to activate the yeast.
  • Add salt and olive oil. Knead the dough in the mixer for about 8 minutes until smooth.
  • Shape the dough into a ball, score a cross on top, and let it rise for 40 minutes.
  • Add the remaining 50g of flour and knead gently to deflate the dough.
  • Divide the dough into three equal parts. Shape each piece into a loaf, then let them rest for 5 minutes.
  • Roll each piece gently into a final loaf shape.
  • Line a baking tray with parchment paper, sprinkle it with flour, and place the loaves on the tray with some space in between. Let them rise for 25 minutes.
  • Spray the loaves with water, sprinkle with sesame seeds, and score the tops with a razor or sharp knife.
  • Preheat the oven to 190°C (375°F) and bake the loaves for 40–50 minutes top and bottom heat.
