These Greek baked eggplant fritters (melitzanokeftedes) are a lighter twist on the traditional fried version. Made with roasted eggplant, fresh herbs, feta cheese, and tomatoes, they are packed with Mediterranean flavors while staying healthy thanks to oven-baking instead of frying.

Ingredients

  • 900 g 2 lb Eggplants

  • 2 2 Eggs

  • 3 3 Spring Onions

  • 1/2 bunch 1/2 bunch Parsley

  • 20 20 Fresh Mint Leaves

  • 50 g 3 1/2 tbsp Olive Oil

  • Salt and Pepper, to taste

  • 1 tsp 1 tsp Smoked Paprika

  • 2 2 Onions, pureed

  • 3 3 Garlic Cloves, pureed

  • 20 20 Cherry Tomatoes, chopped

  • 150 g 5 oz Feta Cheese

  • 200 g 7 oz Melting Cheese Mix, grated

  • 100 g 1 cup Breadcrumbs

  • 100 g 3/4 cup Self-rising Flour

How to make Greek Eggplant Fritters

  • Preheat oven to 200°C (390°F).
  • Remove stems from eggplants, cut in half, and pierce with a fork. Place on a parchment-lined tray, drizzle with olive oil, sprinkle with salt, and bake for 30–35 minutes.
  • In a bowl, beat eggs and mix with parsley, mint, and spring onions.
  • Puree onions and garlic, then add to the bowl.
  • Scoop roasted eggplant flesh, chop finely, and add to the mixture.
  • Add cherry tomatoes, feta, melting cheese, salt, pepper, paprika, olive oil, breadcrumbs, and flour. Mix well.
  • Let mixture rest for 20 minutes.
  • Shape into patties and place on a parchment-lined tray. Drizzle with olive oil.
  • Bake at 200°C (390°F) for 40 minutes until golden brown.
