Ingredients

  • For the Dough
  • 1 kg 1 Strong Bread Flour

  • 300 g 300 Sugar

  • 100 g 100 Fresh Yeast (or 32 g dry yeast)

  • 350 g 350 Milk, lukewarm

  • 200 g 200 Butter, room temperature

  • 3 3 Large Eggs

  • 1 pinch 1 Salt

  • Zest of 1 Orange

  • 22 g 22 Mahlab, ground

  • 2-3 2-3 Mastic tears, ground

  • 2 2 Vanillins

  • For the Filling
  • 300 g 300 Milk Chocolate Couverture, chopped

  • For the Egg Wash
  • 1 1 Egg

  • 30 ml 30 Water

  • 1 pinch 1 Salt

  • Almond flakes or Sesame seeds for sprinkling

How to make Greek Tsoureki Buns

  • For the Dough
  • In the bowl of a stand mixer, combine yeast, lukewarm milk, and 5 tbsp of flour. Stir lightly and let sit for 10 minutes until foamy.
  • Add sugar, mahlepi, mastiha, vanilla, orange zest, eggs, remaining flour, and a pinch of salt. Knead on low speed for 4–5 minutes (or by hand).
  • Gradually add the butter, cut into small cubes, and knead for another 3 minutes until incorporated.
  • Cover dough with a towel and let rise for 40–50 minutes in a warm spot until doubled in size.
  • Transfer dough to a lightly floured surface, knead gently to deflate.
  • Divide into 100 g pieces (about 21 pieces).
  • Roll each piece into a rope about 30 cm (12 in) long, flatten slightly, place a little chocolate along the center, fold and seal to form a rope again.
  • Shape into a snail form and place on a parchment-lined baking tray, leaving space between buns.
  • Let rise again for 20–25 minutes.
  • Egg Wash
  • Whisk egg, water, and salt.
  • Brush over buns and sprinkle with almond flakes or sesame seeds.
  • Bake
  • Bake in a preheated oven at 160°C / 320°F (bottom/top heat) for 20 minutes until golden brown.
