Ingredients

  • 500 g 1.1 lb Giant Beans

  • 2 liters 8 1/2 cup Water

  • 150 g 2/3 cup Olive Oil

  • 150 g 5 oz Country Style Sausage, sliced

  • 2 2 Large Onions, roughly chopped

  • 3-4 3-4 Garlic Cloves, finely chopped

  • 2 2 Red Florina Peppers, diced

  • 2 2 Carrots, diced

  • 300 ml 1 1/4 cup Tomato Juice

  • 2 tbsp 2 tbsp Tomato Paste

  • 1 tsp 1 tsp Sugar

  • Salt and Pepper, to taste

  • 1 tbsp 1 tbsp Smoked Paprika

  • 1/2 bunch 1/2 bunch Parsley, finely chopped

  • Olive Oil and Pepper, for drizzling

How to make Greek Gigantes

  • Soak the giant beans overnight in water.
  • The next day, drain and place them in a pot with 2 liters (8ยฝ cups) of fresh water. Boil for 30 minutes.
  • Add salt and continue cooking until tender โ€” about 2 hours in total.
  • Meanwhile, prepare the sauce.
  • For the sauce
  • In a large pan, heat the olive oil and sautรฉ the sausage slices until lightly browned.
  • Add onions, garlic, peppers, and carrots. Sautรฉ for 5โ€“6 minutes until soft.
  • Stir in most of the parsley (save a bit for garnish).
  • Add tomato paste, sugar, smoked paprika, and tomato juice.
  • Stir and pour in a little of the bean cooking water.
  • Lower the heat, cover, and simmer until the sauce thickens.
  • Transfer the cooked beans to a baking dish, pour the sauce over, and mix gently.
  • Drizzle with olive oil, season with pepper.
  • Bake in a preheated oven at 200ยฐC (390ยฐF) for 70 minutes.
