Ingredients

  • For the Dough
  • 500 g 4 cup All-purpose Flour

  • 330 ml 11 fl oz Club Soda (carbonated water)

  • 120 g 1/2 cup Tahini

  • 20 g 1 1/2 tbsp Sugar

  • 10 g 1 1/2 tsp Salt

  • 1 tsp 1 tsp Baking Powder

  • For Brushing
  • 1 cup 1 cup Lukewarm Water

  • 1 tbsp 1 tbsp Sugar

  • Sesame Seeds, for sprinkling

How to make Lagana Bread

  • In a large bowl, combine the flour, baking powder, sugar, and salt. Mix well.
  • Add the sparkling soda and tahini. Mix until the ingredients are incorporated and a soft dough forms.
  • Cover the bowl with a towel and let the dough rest for 10 minutes.
  • Transfer the dough to a floured surface and knead for about 30 seconds.
  • Using your hands, shape the dough into the traditional oval lagana shape.
  • Lightly flour a piece of parchment paper and place the dough on top. Adjust the shape as needed.
  • Prepare the Brushing Mixture
  • In a small bowl, mix the water with the sugar.
  • Brush the surface of the lagana with the mixture and sprinkle generously with sesame seeds.
  • Using your fingers, press dimples across the entire surface.
  • Bake in a preheated oven at 400°F (200°C), conventional heat, for 35–40 minutes, until golden and fully baked.
