Ingredients

  • For the Syrup
  • 600 g 3 cup sugar

  • 400 g 1 2/3 cup Water

  • 1 tbsp 1 tbsp Glucose syrup (optional)

  • Juice of 1/2 Lemon

  • For the Saragli
  • 1 package 1 package Beirut-style phyllo dough

  • 250 g 9 oz Sheep’s milk Butter or unsalted Cow’s Butter, melted

  • For the Vanilla Ice Cream
  • 500 g 2 cup Heavy Cream

  • 400 g 14 oz Sweetened Condensed Milk (1 can)

  • 2 2 Vanilla Capsules

  • 1 pinch 1 pinch Salt

Recipe directions

  • Prepare the Syrup
  • In a saucepan, combine the sugar, water, glucose syrup, and lemon juice.
  • Bring the mixture to a boil.
  • Once boiling, cook for 6 minutes.
  • Remove from the heat and set aside.
  • Prepare the Saragli
  • Brush the phyllo sheets generously with melted butter.
  • Roll them into saragli shapes using a thin rod or skewer.
  • Arrange the saragli in a baking tray.
  • Pour the remaining melted butter over them.
  • Refrigerate the tray while the oven preheats.
  • Bake in a preheated oven at 320°F (160°C) using conventional top and bottom heat for approximately 1 hour, until deeply golden.
  • Immediately pour the syrup over the hot pastries.
  • Allow them to cool completely.
  • Prepare the Vanilla Ice Cream
  • In a large bowl, whip the heavy cream with the vanilla and salt until fluffy whipped cream forms.
  • Add the sweetened condensed milk.
  • Fold gently using circular motions until fully incorporated.
  • Transfer the mixture to the freezer and freeze until firm.
  • Assemble the Dessert
  • Slice each saragli lengthwise through the center.
  • Fill generously with vanilla ice cream.
  • Serve immediately.
