Ingredients

  • 1 Cup 1 Cup Orzo

  • 3 Cups 3 Cups Water

  • 1/2 Cup 1/2 Cup Crushed tomatoes

  • 100 g 3.5 oz Olive oil

  • 1 tsp 1 tsp Sweet paprika

  • 2 2 Onions, finely chopped

  • 2 Cloves 2 Cloves Garlic, finely chopped

  • 2 2 Red peppers, diced

  • 2 2 Green peppers, diced

  • 2 2 Carrots, diced

  • 2 2 Eggplants, diced

  • 2 2 Zucchini, diced

  • 20 20 Cherry tomatoes, cut into quarters

  • 250 g 8.8 oz Mushrooms, chopped

  • 1/2 bunch 1/2 bunch Parsley

  • Salt and Pepper

Recipe directions

  • Place a pot over heat. Add the olive oil.
  • Add the onions, garlic, green peppers, red peppers, carrots, zucchini, eggplants into the pot and sauté well for about 5 – 7 minutes.
  • Add the mushrooms, cherry tomatoes and sauté.
  • Season with salt, pepper and sweet paprika and stir.
  • Add the orzo and sauté while stirring.
  • Add the crushed tomatoes and stir.
  • Finally, add the water and lower the heat.
  • Cover the pot with its lid and simmer for about 3 minutes.
  • After 3 minutes add the parsley and stir. Cover the pot with its lid and simmer for about 8 minutes.
  • After 8 minutes, turn off the heat and wait for at least 20 more minutes.
  • Let it cool a bit and serve.
