Stuffed Bell Peppers with Feta & Cheese

Stuffed bell peppers are a beloved summer dish in many Mediterranean countries, and this Greek-style vegetarian version is a true gem. Instead of the traditional filling with rice or minced meat, this recipe uses a flavorful mixture of crumbled feta, shredded cheese, cherry tomatoes, and fresh herbs. The result? A light, aromatic, and incredibly satisfying meal that’s perfect as a main course or side dish.

The preparation is straightforward and fast, requiring only a few basic ingredients. The creamy cheese blend melts beautifully inside the peppers, while the cherry tomatoes add a touch of freshness. Smoked paprika and thyme elevate the flavor profile, making each bite rich and balanced.

This dish is ideal for vegetarians, busy families, or anyone looking for a delicious oven-baked meal. It can be enjoyed hot right out of the oven, or even at room temperature – making it a fantastic make-ahead option for work lunches or picnics. Pair it with Greek yogurt or a crisp salad for a complete meal.

What’s great about this recipe is that it’s both simple and impressive. You don’t need to be an experienced cook to pull it off, but the result feels like something special. Plus, it reheats well and is just as tasty the next day.

Ready in under an hour, these cheese-stuffed bell peppers will become a staple in your summer meal rotation. Whether you’re hosting friends or simply craving something cozy and homemade, this recipe delivers comfort, nutrition, and authentic Mediterranean flavor in every bite.
